The most simple luau recipes should take you little or no time to prepare. There are so many ideas for good food to be served at a luau party; having guests bring a luau dish each might lighten the load of preparing for a big party. However, if you wish to keep in simple, we have a few dishes that can be whipped up within 30 minutes or less.
For example, look to the Hawaiian lunch plate for inspiration and serve coleslaw and macaroni salads. The Hawaiian coleslaw is chopped cabbage mixed with mayonnaise, mandarin orange slices and chopped pineapple chunks. Season with white pepper, salt, a few shakes of ground ginger and nutmeg. Serve it chilled. There are few simple luau recipes that can outdo the macaroni salad in ease of preparation and economy. In a large bowl, mix cooked macaroni with lots of mayonnaise – lots. Stir in grated carrots and season with pepper and salt for taste. There are countless variations on this basic recipe - you can add potatoes too if you want. The key to replicating the island-style comfort food is to ensure the macaroni is well cooked. Overcooked will do just as well. Here are a few more simple luau recipes:
Ahi poke – this is chopped raw tuna mixed with sesame oil, chopped green onion and limu or seaweed. It is best to firstly season the ahi with Hawaiian sea salt before adding in the other ingredients. Celebrity chef Sam Choy adds chopped kukui nuts for texture.Lomi-lomi salmon – lomi is the Hawaiian term for massage and you can see why this dish is aptly named. Break salted salmon into flakes and pieces, add in a chopped Maui onion or green onions and chopped tomatoes. Give the mix a good “massage” until all ingredients are fully mixed and chill in the refrigerator before serving. Sweet potatoes – a staple at island luaus, this requires little more effort than boiling the sweet potatoes and preparing the glaze in a small skillet. Cut and skin boiled sweet potatoes into chunks or slices. In a skillet with melted butter, pour in ˝ cup of water and 1 cup of brown sugar and heat over a low flame for no more than five minutes. Pour over the sweet potatoes before serving. Grated coconut can be added to the syrup.
Hawaiian fruit salad - there are no fixed ingredients for a fruit salad. Of course, it being a luau, tropical fruits are a must.
