Yummy Luau Cake Ideas


Need some luau cake ideas? Think of ways to incorporate Hawaiian fruits such as pineapple, lilikoi and lime, coconuts or macadamia nuts into a cake and you are more than half way there.

How many ways can you use Kona coffee in a cake?

We can think of several – in the mix, as a frosting or icing or as a spread between layers of cake.

Start with a basic Hawaiian happy cake or have it shipped from the Kemoo farms in Wahiawa on Oahu, which was once considered the pineapple capital of the world.

The happy cake is a moist cake made with Hawaiian macadamia nuts, pineapple chunks and coconut. It is normally served chilled but foodies have come up with ways to serve it slightly toasted with generous helpings of ice cream!

The Happy Cakes bakery has been selling the original happy cake for 38 years and has now introduced a mini version for smaller appetites.

And, for those who must have chocolate as part of their luau cake ideas, the bakery has created an indulgent Chocolate Macadamia Nut Fudge Brownie Cake – the name says it all.

A lilikoi cake is one of the favorite luau cake ideas.

All you need is a basic yellow cake mix, and use lilikoi juice instead of water. Add lilikoi juice concentrate into a chiffon frosting and complete the cake with a lilikoi gel topping which is spread over the frosting.

The lilikoi gel topping is made with cornstarch, a little water, a can of lilikoi juice, lemon juice, egg yolk, butter and a pinch of salt. It is best spread when the gel mix is slightly warm. Cool the cake down in the refrigerator before serving.


Hawaiian Pineapple and Kona Coffee

Luau Cake Ideas Can the dark strong taste of Kona coffee and tangy pineapple co-exist in a cake?

In one of the more original luau cake ideas called the Hawaiian Upside Down Pineapple Cake, they most certainly can - and tastefully too!

  • Caramelize the pineapple rings with brown sugar and cinnamon before laying them in overlapping rings in a pan.

  • Stir in a cake mix and when fully baked and cooled, invert onto a platter.

  • Serve slices with a sauce made of dark rum and ground Kona coffee – one bite and you will think you are back in the islands.

Once you have mastered the basic upside down cake, you can add your special touches by using coconut milk instead of regular milk and throw in some ginger slices into the cake mix or ground ginger into the topping for the pineapple slices.

For a truly authentic touch, use Maui Gold Pineapple, a very sweet pineapple grown only on the island of Maui.

Guests arriving and the cake not baked? Here is a quick idea suggested by the Maui Gold Company:

  • Cut two round slices of pineapple into four wedges and place onto a baking sheet.

  • Stir coconut, honey and chopped walnuts – 1/3 cup each – with a dash of allspice in a bowl and place a spoonful of the mix on each pineapple wedge.

  • Place under the broiler for around four minutes or until the mix starts to turn golden brown. Avoid burning the coconut and serve warm.
Your guests will enjoy the tropical flavors so much they might just crown you top chef for the day!
